Balsamic Beet


  • 1 Preheat oven to 200C
  • 2 Top and tail beets and cut into 2cm cubes
  • 3 Place beets in a roasting tray and pour over olive oil and vinegar. Season with salt and pepper. Coat beets evenly with the liquid
  • 4 Cover with foil and cooked for 45 minutes
  • 5 Remove tray from the oven and remove the foil. Place tray back into the oven and cook for a further 15 minutes
  • 6 Remove from oven. Add apple juice and stir through to dissolve
